Roasted Green Beans: Ingredients & Substitutions

  • Green beans. You can use fresh or frozen beans. I give instructions on how to use frozen beans in the post and recipe card. I’ve done this often with great results.
  • Olive oil. Any neutral oil works well, I suggest avocado oil or canola oil as substitutions for olive oil.
  • Smoked paprika. I love the smoky flavor of smoked paprika, but you can use regular paprika if desired.
  • Minced garlic. you can substitute ½ tsp garlic powder for the minced garlic. You can also use jarred or freshly chopped garlic depending on your preference.

To being, preheat the oven to 425 degrees Fahrenheit – I find this is the perfect temperature to get wonderfully crispy green beans without drying them out.

FAQs

Why do you blanch green beans before roasting? ›

Blanching green beans softens them while retaining a crisp-tender texture and bright green color. Blanch green beans before sautéing, roasting, or freezing.

How do you keep green beans crispy? ›

The trick to this crunchy and vibrant green bean salad is a method called “blanching and refreshing”. This simply means cooking your beans in boiling water and then plunging them into cold water to stop the cooking process and keep their wonderful colour and bite.

Why are my green beans not crispy? ›

Make sure you spread out the green beans. They can overlap some, but you want as much surface area exposed to the heat as possible for crispness. Along the same lines, you can technically double this recipe, but remember that the more you make at once, the less crispy the green beans will be.

Why are my roasted green beans tough? ›

If your green beans are tough after roasting it most likely means one of two things. Either the green beans you used were a bit too mature and tough (this method is best with slender green beans, especially haricots verts, or French green beans) or you didn't cook them long enough.

Should I blanch before roasting? ›

Sometimes I've burned vegetables when roasting them until they were tender. Blanching veggies before roasting them allows them to caramelize a bit without burning. So, try this — enjoy the bounty.

How to make Paula Deen green beans? ›

Add green beans to pan and sauté over medium heat for 2 minutes, stirring frequently. Add boiling water to pan and cover. Cook for about 15 minutes, just until beans are tender. Add vinegar, butter and salt and pepper and stir.

What adds flavor to green beans? ›

Butter: A bit of butter adds a rich flavor and helps the seasoning stick to the green beans. Seasoned salt: Buy seasoned salt from the store, or make your own seasoned salt at home. Chili powder: This is an unexpected knockout seasoning. Chili powder adds a touch of spice and color without being too overpowering.

Why cook green beans in baking soda? ›

Your Beans Will Cook Faster

Well, creating an alkaline (or basic) environment by adding a small amount (about 1 teaspoon per cup of dry beans) of baking soda to your soaking/cooking water can actually help your beans cook faster.

Can you overcook green beans? ›

Don't overcook them!

Nothing is worse than a mushy, overcooked green bean. Crisp and slightly tender beans is the goal. To achieve this, taste a bean or two during the cooking process. If it is too crispy for you, keep cooking, testing another green bean in a minute or two.

How many minutes to blanch green beans? ›

How long do you blanch green beans? Blanch green beans until they are tender-crisp and the bright green color is set. This usually takes about 3 to 5 minutes as long as your pot of water is at a rapid boil when they go in.

How do you can green beans and keep them crisp? ›

Choose freshly picked green beans, rinse clean, snap to bite-size pieces, place in jars and cover with boiling water, then pressure can for just 20 minutes! Easy peasy and no need to pre-cook or blanch your green beans.

How do you make beans not crunchy? ›

Compared to the grainy texture offered by old beans, baking soda beans can yield a creamy and smooth texture. Some critics of this method have dismissed using baking soda to soften old beans as they say it gives beans a “soapy” taste. In large amounts, this may be true, but a little baking soda goes a long way!

Are sauteed green beans supposed to be crunchy? ›

Cover the pan and let the green beans cook until fork tender, about 5 minutes. If you want your green beans to still have some crunch to them, you might only want to cover the pan for 3 minutes. I like my green beans to be very tender, without being mushy.

What happens if you don't blanch green beans? ›

If you freeze green beans without blanching them first, the texture, color, and taste won't be quite as fresh when you defrost and eat them after long-term storage. They'll be good for a couple of months in the freezer, but quickly go downhill thereafter.

What are the benefits of blanching green beans? ›

Blanching stops enzyme actions which otherwise cause loss of flavor, color and texture. In addition, blanching removes some surface dirt and microorganisms, brightens color and helps slow vitamin losses. It also wilts greens and softens some vegetables (broccoli, asparagus) and makes them easier to pack.

Does blanching green beans remove nutrients? ›

Fresh vegetables contain enzymes that impact the freshness, color and flavor of the vegetables. Blanching deactivates these enzymes so the peak quality is preserved. Unfortunately, if vegetables are not blanched correctly, the vegetables can become too soft and essential nutrients, like vitamin C, can be lost.

What is the goal of blanching green beans prior to freezing? ›

Blanching your beans will help them retain color, vitamins and clean them of excess dirt and bacteria. The objective when blanching is to soak your green beans in the water bath just long enough to achieve those objectives without cooking them.
